Made from grapes from vineyards across the Yarra Valley by Rob Dolan, Adrian Santolin + the team.

12 hours on skins post-crushing. 20% barrel on light solids, 80% fermented in stainless steel.

Rob Dolan is known for his skill in the winery, passion for helping others, and cheeky character.

He says the trick is sourcing the best fruit, and from there, using a ‘less is more’ approach in the winery to bring the wine it to its full expression.

PAIR WITH PAN FRIED SCALLOPS WITH BACON CRUMB

Searing scallops enhances their sweetness and makes them a sure fired match for our textured Pinot Gris. The acidity of the wine will balance out the fat in the bacon crumb while the apple, pear and lemon blossom fruit in the will complement the flavours of the scallops.
