10% of the wine was matured in new French oak, with the balance seasoned + stainless on light lees for 6-10 months.
Rob Dolan is known for his skill in the winery, passion for helping others, and cheeky character.
He says the trick is sourcing the best fruit, and from there, using a ‘less is more’ approach in the winery to bring the wine it to its full expression.
The Moroccan lamb cigars are rich with earthy spice and need a wine with plenty of fruit to provide a counterpoint to the flavours. The acidity of the wine will cut through the fat while the spice in the cigars and from the oak will complement each other.
