We make our Sauvignon Blanc a bit like the French do. By putting 50% in oak barrels, we create a richer texture, a style which really suits the Yarra Valley; you’ll still taste bright, citrus-driven flavours, but with a rounder mouthfeel.

Great with green vegetables, oysters, fish, fresh herbs, mild vinaigrettes and goats cheese.

Colour:pale straw, green hues

Aroma:citrus, guava, lychee + hints of savoury oak

Palate:tropical fruits with a crisp, dry finish

Cellar:medium term, up to 5 years will be rewarded

Vineyard:Dixons Creek, Yarra Glen + Chirnside Park

Harvest:28th February - 14th March 2019

Method:hand + machine picked


Process:destemmed + crushed, with some whole bunch, cold settled + racked to oak

Fermentation:fermented cool in first and second use French oak (40%), balance stainless steel

Barrel:40% matured for 8 months, bottled in November 2019
