Pinot Noir made to be rich and bold for food pairing. Richer plum and backing spice works with the stronger tannin profile and to make a wine perfect for pairing with medium-bodied meats such as pork loin or duck breast.

Method: hand harvested

Winemaking

Process: destemmed, crushed, two day cold soak
Fermentation: plunged twice daily
Barrel: matured in French hogsheads for 10 months
Alcohol: 13.7%
