Pinot Noir made to be rich and bold for food pairing. Richer plum and backing spice works with the stronger tannin profile and to make a wine perfect for pairing with medium-bodied meats such as pork loin or duck breast.

Method:hand picked


Process:crushed and destemmed

Fermentation:cold soaked for 2 days prior to seeding with Burgundy yeast strain in open pots. Plunged twice daily + pressed when dry

Barrel:matured in French hogsheads for 10 months
