Made with delicate fruit sourced from the Yea Valley, 30 minutes north of the Yarra; the coolness of this area ensures freshness and acidity. This sparkling wine made from 100% chardonnay grapes heroes citrus and stone fruit, with soft brioche notes and
a creamy mouthfeel.
A stunning aperitif before a meal, to pair with canapés, cheese of all varieties or fresh oysters.

Aroma:grapefruit + apple, with a touch of white peach
Palate:citrus fruits, creamy + toasty

Harvest:13th - 16th February 2018
Process:whole berry pressed then cold settled 24 hours
Fermentation:racked, including light solids + fermented at 13-15 degrees c for 10-12 days, matured on yeast lees for 9 months, rumbled monthly
Method:secondary ferment achieved via Charmat method
