Method:hand picked


Process:whole bunch pressed, cold settled, racked with solids

Fermentation:seeded with Burgundy isolate yeast, barrel fermented to dryness

Barrel:matured on primary fermentation lees in barrel for 9 months in seasoned French oak, stirred monthly
