Anyone who has spent any time with Rob knows that he likes to hatch ideas. Lots of ideas. Not all his ideas are rolled gold but the one common theme is that they all encourage people to grow, create and spread their wings.

At the core of the business is Rob Dolan Wines, a brand based on a reputation for making premium wine in the Yarra Valley for more than 20 years. Included in the facility is a contract winemaking function headed by young, enthusiastic winemakers who produce a handful of well-known brands from the Yarra Valley and beyond.

The winery now  acts as a “Hatchery” for ideas and new businesses such as Gin, Wine, Beer and Cheese – some will grow and move forward to other sites, but all will have gained an opportunity to “have a go” and pursue their dreams through their involvement with Rob Dolan Wines.

Stone + Crow Cheese Company, Warrandyte South


Handcrafted artisan cow and goat milk cheeses matured at the Rob Dolan winery. Founder/Cheesemaker Jack Holman works in collaboration with chefs and other food and beverage producers (sometimes throughout the night) to produce his unique and experimental cheeses.  Follow @stoneandcrowcheese

The Public Brewery, Croydon


Water. Sun. Beer. A micro brewery with a new twist on an old concept – you make the beer too! The venue also has a pretty impressive bottle shop (The Public Cellars – open 7 days), bar and kitchen and an additional brewery within the Rob Dolan winery (100 Acres Brewing Co.). Croydon brewery open Wednesday-Sunday.

Four Pillars, Healesville


A small Australian gin distillery located in Healesville, established in 2013. Distillery Door open 7 days for tastings and sales, groups by appointment. One of the Founders (Cam) set up the original distillery in the Rob Dolan winery before moving on to their new Healesville home in 2015. If you haven’t heard of them yet you’ve been living under a rock.

Santolin Wines, Yarra Valley


As well as being a winemaker for Rob Dolan Wines, Adrian Santolin along with his wife Rebecca run their family owned label focused on producing hand crafted, small batch wines. They are passionate about minimal intervention in order to showcase each region and variety in its purest form.

Boat O’ Craigo, Healesville


Founded by Steve and Margaret Graham, Boat O’ Craigo is a boutique family wine business spanning two generations. Their Yarra Valley wines are produced by Rob Dolan with fruit grown in their vineyards in Kangaroo Ground and Healesville. Their Cellar Door and Kitchen are located on the Healesville vineyard and is open Friday, Saturday + Sunday from 11.00am-5.00pm.
